Chicken Pasta Salad

For those of you who asked for the chicken salad recipe from last week’s Entertaining post, here it is! Easy and delicious. Plus, the flavors blend really nicely over a day or two, so this is a great option if you need to make it ahead of time – which seems to be increasingly important to me when planning to host friends or to bring a dish to an event. The salad is also great as a leftover for the following day’s lunch.

Recipe
Chicken Pasta Salad

Salad Ingredients:

1, 7 ounce package large elbow macaroni (or you can use macaroni rings)
3 cups cooked chicken cubes (I like to use rotisserie chicken)
1 cup grated carrots
1 cup diced celery
1 bunch green onions, sliced
1/2 cup each:
sliced radishes
diced green pepper
sliced black olives (or green olives)
chopped parsley

Cashews or pecan halves for garnish

Dressing Ingredients:

1-1/2 cup mayonnaise
1/4 cup fresh lemon juice
1/3 cup sugar
1 teaspoon salt
1/4 teaspoon pepper

Directions:

Cook macaroni according to package directions. Drain. While macaroni is cooking, mix the dressing ingredients. Add dressing to the macaroni while warm. This will help the macaroni be more flavorful. Add remaining salad ingredients and mix well. Refrigerate. Top with nuts just before serving. If using the mason jar serving style from last week’s post (link here), fill the jars with salad before chilling in the refrigerator. It’s a cute serving method, and also allows for easy transport (such as packing in a cooler for a picnic). Serves 6-8.

    This would also be terrific with cooked turkey – either rotisserie breasts that are available in many supermarkets or just bake turkey tenderloins and cube them up. I am saving this one and will use it soon! (I have a ridiculous amount of love for pasta salads – especially the creamy-based ones.) 🙂

      I’m excited to try this mason jar serving style at the lake this summer – fun to have something like this for people to grab out of the fridge when they’re hungry at different times throughout the day.
