Garlic & Sea Salt Knots

During the summer, when impromptu gatherings are much more likely to happen compared to the winter months, I like to have some go-to appetizer recipes for things that I can make quickly with items on hand. These garlic and sea salt knots are great because they’re tasty and easy to make, good for adults and kids alike, can be dressed up with great mustards and other dips, and the simple ingredients will keep frozen or packaged for long periods of time. I find that last part to be especially important when at the cabin – I can’t always haul out a full load of groceries, nor can I leave things out there that don’t have a shelf life. All of these ingredients can be kept in the fridge, pantry or freezer and used only when you want to make a quick, homemade, yummy snack. The recipe and simple steps are below.

Orange Cream Soda

I’m always amazed how my mom can quickly whip up the yummiest of treats at the end of a meal just by grabbing things she has on hand. Often, the goodie evokes memories of a favorite childhood sweet, like with this creamy orange combo that is a grown-up version of the “Dreamsicle” frozen confection. Vanilla ice cream is always on hand at grandma’s house for my daughter Ella, orange sherbet for my dad, and club soda for drinks of other sorts. Simply combine equal parts vanilla ice cream and orange sherbet and top with club soda for a refreshing and delicious dessert. Leave unmixed for a float, or stir together (my favorite) for more of an old-fashioned soda. Serve in a nautical themed cute glass with a summertime straw for a special touch.

Breakfast Quesadilla

Tex Mex flavors are always a hit with our crowd. This recipe combines all the favorites – hash browns, cheese, tortillas and salsa in one easy to serve and eat bundle. Particularly when the full extended family is at the cabin, meal times get a little loose. Traditional breakfasts don’t happen as much, as leisurely mornings tend to lead up to lunchtime before we’re organized and ready for a meal. This is a perfect option for those in-between times, when you need something a little more filling than cereal but don’t want to have a formal brunch menu. The great thing about this combo is the ingredients are staples in the cabin refrigerator. If you’re looking to up the protein level, you could add scrambled eggs as a side or incorporate it right into the quesadilla.
