Caramel Party Mix

I love fall football. I should rephrase that. I love everything that goes along with fall football. Leisurely weekend days, anticipation for the big game (with a 5-year-old in the house there is a LOT of talk about the game), cozying up on the couch, crockpot meals and snacking on, well, snacks. My favorites are those that combine sweet and savory, like this caramel party mix (recipe below).

Reality Check. Although I have been known to sit and watch a good chunk of a game, there is another reason I really love fall football.  There aren’t many things that can hold the attention of an energy-filled kindergartner, but football with dad certainly can. It’s a time when this mama can get things done. Whether that be cleaning, running errands, getting a little work off my plate or perhaps even stealing a bit of a snooze while Ella naps, Sundays can be a magical time in the Olson house.

Recipe
Caramel Party Mix

12 cups popped corn
6 cups Fritos (original)
9 cups Crispix cereal
1 cup mixed nuts
3 cups small pretzel twists
1, 1lb bag M&Ms

Place all ingredients, except M&Ms in a large roasting pan.  A disposable foil turkey roasting pan works great for easy clean up.

Caramel Mixture

2-1/4 cups brown sugar, packed firmly
1 cup butter
2/3 cup light corn syrup
1 teaspoon salt
1 teaspoon baking soda

In a large sauce pan, combine brown sugar, butter, corn syrup and salt.  Bring mixture to a slow rolling boil.  Cook for 5 minutes, stirring occasionally to prevent mixture from scorching.  Remove from heat and add baking soda.  The caramel will bubble up and increase in volume.  Pour over dry ingredients and gently mix to coat dry ingredients.  Bake in a 200 degree oven for 1 hour, stirring every 15 minutes.  While mixture bakes, place two large sheets of parchment paper on counter.  Turn mixture out onto paper to cool.  Break up large clumps while warm and add M&M’s.  When cool, store in an air tight container.
